Sunshine with Sushi!

Individuals in different parts of the world eat Sushi in different ways, for me it is my much-loved breakfast. Nothing can be a better than starting my day with sunshine and sushi.  It was indeed an amazing experience when my friend Macau visited me and taught me how to make fresh sushis at home. It was like some Japanese expert guiding me how to make sushi !!, just the right way to roll it from both the ends, the perfect technique to slide your knife  through the sushi to get the bits even,  a few seaweed sheets,  some fresh and crispy cucumber and sushi rice all combined to give you an authentic sushi, the Japanese way!  This recipe is a must for all sushi connoisseurs!  Devour this Vegetable Sushi recipe.

Ingredients
2 cups of boiled sushi rice,
4 tables of white vinegar,
Salt as per taste,
4 Nori sheets,
1 cup of cucumber cut into strips,
1 cup of carrots cut into strips
You will also need
Sushi rolling mat,
Knife,
1 bowl of cold water
Moisten you hands in the bowl of cold water, to avoid the rice sticking to your fingers and also to the rolling mat. Then spread the Nori sheet on the rolling mat and layer of sushi rice in center of the Nori, making a rectangle. Make sure that the rice lies evenly over the Nori.
Lay two cucumber strips and one carrot strip, horizontally across the center. You can changed the combinations of vegetables.
Using the rolling mat, fold the Nori and apply pressure, make sure to give a round shape to the sushi, not rectangular. Apply pressure using your entire fingers on the top taking support from the thumbs placed below. Fold the mat forward once again and apply more pressure.
Dip the entire knife in cold water, trim off the uneven ends, then cut the sushi into six even pieces. Serve the making on a plate with each bit facing up with light soy sauce and wasabi as a dip.

Take a Big Bite out of life- Chinese Stir Fry Noodles

The weather this weekend was not too inspiring to go and have fun. But my heart was stuck on the Big Welsh Bite taking place in the local park. Somehow I persuaded my friend to toddle up to the park, and it took only some seconds for the doldrums to transform to a joyful grin. The gorgeous park greeted tens of thousands of citizens of all ages by saying TAKE A BIG WELSH BITE OUT OF LIFE . I caught up with my Chinese friend during the walk. What a festive day it was the park full of astounding animals, appealing  display arts and crafts, and delicious local produce. It was indeed a big treat for all of us. Me and my friends were commemorating a enhanced way of living only to realize there was more, Cooking demonstrations, we squeezed in two of the demonstrations in our time, wow the wonderful strawberry meringue and mixed herb quiche by a Persian Chef, we were about to leave when I saw loads of Indian spices around and couldn’t wait to identify why? Wow it was my chance to learn Indian curries and pilau from a British Chef, well nothing seemed more imperative then attending this cookery demonstrations. I was taken aback by the authenticity of the food this wonderful British Chef cooked. It was indeed an indulgence for all of us. Well this was still not the end of this.  This wonderful chef had vegetables to take away from his fresh produce, and before we left the tent, our hands were full of broccoli, spring onions, ginger, garlic, peppers, carrots and so much more. With a Chinese friend around, and so many fresh vegetable, my mind can only thing of one thing, yes Chinese Stir Fry noodles, I just had to pick up a packet of noodles from supermarket on our way back home, and yes indeed IT WAS TAKING A BIG BITE FROM LIFE!!!

 INGREDIENTS
4 cloves of garlic,
2 thin slices of ginger,
½ carrot, grated,
Bunch of Bok Choy,
½  Yellow pepper, sliced
1 Red onion, sliced
4 Tbsp soya sauce,
8 tbsp vegetable oil,
1 bunch of spring onions finely chopped,

1 tsp chili flakes,

Salt and pepper



Boil the noodles as per the instructions given on the packet. Heat the wok, add three tablespoons of vegetable oil, wait for few second for the oil to get hot, and then add two cloves of crushed garlic and one slice of ginger. Stir fry them for a few second till the time they begin to sizzle, and you can smell the aroma of ginger and garlic. Then add the red onion; stir fry the onion, till the time they become translucent. Add yellow pepper and stir fry the yellow pepper till the time its half cooked, and this out of the wok into a plate.
Reheat the wok, add 5 tablespoon of oil again, and wait till the oil is hot, add the noodles, turn down the fry, and stir fry the noodles with oil, and add the soya sauce and keep tossing, the noodles with oil and soya sauce. Make sure that every noodle has oil and soya sauce in it. Add the remaining ginger, 2 cloves of crushed garlic, spring onion, carrots and Bok Choy  and stir fry for two minutes. Add the earlier stir fried vegetables and mix well.

Chocolate Spring Rolls

When my Chinese Malaysian friend invited me over for dinner, I knew spring rolls was going to be the show stopper dish, but when said spring rolls for dessert, I had no idea that the suprise is going to be a chocolate lovers delight, it was  chocolate spring rolls. Just with the first bit of it  I was in HEAVEN. The walnuts are a perfect match for the rich dark chocolate, filled in the crispy spring roll wrappers. What next, I couldnt wait to recreate my own chocolate spring rolls. Ofcourse since then none of my Chinese Dinners is incomplete without this HEAVENLY delicious dessert.

Makes  16 Chocolate Spring Rolls

Preparation time: 15 minutes
Cooking Time: 15-20 Minutes

INGREDIENTS
4 spring roll wrappers
155g/4 oz good-quality dark chocolate (with atleast 50% cocoa solids), grated
55 g/2 oz walnuts, chopped
Oil for deep frying

You will need a grater,  a cook's knife, a chopping board, and a metal spoon.

Cut each spring roll wraper into four using a scissor or a knife.

Place a spoonful of grated chocolate and chopped walnuts on each wrapper and close it using water.

Repeat the process for the rest of the spring rolls.

Fry the spring rolls in hot oil, until golden brown
Serve Immediately with whipped cream or vanilla ice-cream.
